The Ankh-Morporkian Professions is a supplement for the game "A one in a million chance at adventure". It gives a player some guidance on how to think when creating various types of characters, it is to be considered a guide and this is in no way rules in the sense that it adds anything new to the rules system of the game. 

The character build suggested in the PDF is indeed based on very stereotypical portrayals of various professions, and in a world such as the Discworld, there is definitely room for being inventive and create non-traditional thieves, brutes or bureaucrats.
